Gazpacho ~ Summer's Favorite Soup #Recipe


The end of summer is near but there is still time to enjoy all the fresh produce in this season’s favorite soup: Gazpacho. For centuries, this chilled soup has been a favorite around the world. Over the years it has evolved from the most basic ingredients of stale bread, water, oil and vinegar to include as many ingredients as one desires. Chilled summer soup is a refreshing option with a salad, sandwich or fresh bread. Full on nutrition and low in calories, Gazpacho is an easy, healthy meal.
 

Basic ingredients include: 4-6 chopped tomatoes, 1 chopped cucumber, 1 chopped red onion, 1-2 chopped celery stalks. Toss with 1/4 cup vinegar or red wine vinegar and 1/4 cup olive oil. Add 2 tablespoons lemon juice and sprinkle salt & pepper to taste. Then pour in 2-4 cups tomato juice depending on desired consistency.
Mix, cover and chill overnight. Add croutons or bread slices in the soup when served.

For additional flavor options:
- Add 1 chopped bell or jalapeno pepper.
- Add 1/8 cup chopped cilantro, parsley or chives or garlic.
- 5-6 drops of Tabasco sauce

For a creamed version, combine all ingredients then blend slightly, to desired consistency. Chill and serve.


Fruta de Gazpacho versions include any range of fruits like kiwi, mango, papaya, melons or berries. Dice 1-2 fruit selections, add 2 tablespoons of lime juice, 1 teaspoon of chile powder and 1 tablespoon of chopped cilantro. Toss, chill and serve.
